Easy Couscous With Peas Recipe
Super quick couscous side dish. It is colorful and easy!

Ingredients
  • 1 onion, diced fine
  • 1 clove garlic, crushed
  • 1 T. olive oil
  • 1 c. frozen peas
  • 1 T. minced fresh parsley
  • Salt and pepper
  • 1-1/2 c. vegetable or chicken broth
  • 1 c. couscous

Directions
  1. In a saucepan, sauté the onion and garlic in the oil over medium heat until soft, about 5 minutes. Stir in the peas, parsley, salt, pepper, and broth and bring to a boil. Stir in the couscous, cover, and return to a boil. Remove from the heat and let the mixture sit covered for 5 minutes, or until the liquid is absorbed.
  2. Fluff with a fork before serving.

This is how I make my couscous but I have never added peas. I don't know why I never thought of adding peas before but I will now ;) Thanks so much for a great idea m11andra!

This was VERY good! We made it while camping. We didn't have any garlic handy so I stirred in two tablespoons full of a Curry Mustard. Wow! Excellent.
