How to make it

  • In a saucepan, sauté the onion and garlic in the oil over medium heat until soft, about 5 minutes. Stir in the peas, parsley, salt, pepper, and broth and bring to a boil. Stir in the couscous, cover, and return to a boil. Remove from the heat and let the mixture sit covered for 5 minutes, or until the liquid is absorbed.
  • Fluff with a fork before serving.

    This was VERY good! We made it while camping. We didn't have any garlic handy so I stirred in two tablespoons full of a Curry Mustard. Wow! Excellent.
