Frango Grigio Recipe
A variant of Chicken in White Wine and Cream Sauce. Frango is Portuguese for chicken and Grigio comes from Pinot Grigio. Go for mushrooms with a lot of flavour, and a very fruity wine. Serve with potatoes and green asparagus or cabbage.

Ingredients
  • 2 Chicken (leg) portions - leave the skin on
  • 1 Onion
  • 2 handfuls of Mushrooms
  • 1 Glass of Dry Fruity Wine (Pinot Grigio is good)
  • Single Cream (or Creme Fraiche)
  • Tumeric
  • 1/2 pint chicken stock

Directions
  1. Cut the chicken portions into 2 at the leg joint
  2. Cook the chicken in a frying pan with a little oil - until it is cooked through and golden
  3. meanwhile slice the mushrooms and chop the onions quite thickly
  4. Once the chicken is cooked - remove from the pan and keep warm
  5. Add the mushrooms and onion to the pan
  6. Cook the mushrooms and onions gently - don't let the onions brown
  7. Add the wine, stock and pinch of Tumeric to the cooked mushrooms and onions.
  8. Add the chicken back to the pan.
  9. Reduce the sauce to about a half, turning the chicken.
  10. Stir in the cream, heat through.
  11. Season to taste and serve.
