Asparagus Pesto Recipe
A very nice pesto sauce with a great twist, the asparagus. This has a wonderful blend of flavors and goes great on pasta. Enjoy

Ingredients
  • 1 pound asparagus
  • 1/4 cup pine nuts
  • 3 medium garlic cloves
  • 1/2 teaspoon salt
  • 1/2 cup extra virgin olive oil
  • 2/3 cup freshly grated parmesan cheese

Directions
  1. Have a bowl of ice water ready then trim woody ends from asparagus.
  2. Cut asparagus stalks crosswise into 2” pieces reserving tips.
  3. In a steamer set over boiling water steam asparagus stalks covered 4 minutes.
  4. Add reserved asparagus tips and steam covered until just tender about 1 minute.
  5. Immediately transfer asparagus to ice water to stop cooking.
  6. Drain asparagus well in a colander and pat dry.
  7. In a food processor pulse pine nuts and garlic with salt until finely chopped.
  8. Add asparagus and oil then pulse until asparagus is coarsely chopped.
  9. Transfer pesto to a large bowl and stir in parmesan.
