Onion Marmalade Recipe
From Cooking Light 12/07. Flavors get better if let sit in refrigerator few days.

Ingredients
  • 1 T butter
  • 2 cups diced sweet onion
  • 2 t brown sugar
  • 1/4 cup apple cider vinegar
  • 1/4 t dry mustard
  • Dash of kosher salt & pepper
  • 1 bay leaf

Directions
  1. Melt butter in medium nonstick skillet over medium-high heat
  2. Add onion to pan; cook 20 minutes or until tender, stirring occasionally
  3. Stir in sugar; cook 2 minutes
  4. Add vinegar & remaining ingredients; bring to simmer
  5. Cook 6 minutes or until most of liquid evaporated, stirring occasionally
  6. Discard bay leaf
