Butternut Squash Casserole Recipe
A sweet and crunchy topped side dish that is perfect with turkey. If I don't bring it for Thanksgiving, they don't let me in!

Ingredients
  • 1/3 c. softened butter
  • 1/2 c. sugar
  • 2 eggs
  • 1 can (5oz.)evaporated milk
  • 1 t. vanilla extract
  • 2 cups mashed, cooked butternut squash
  • TOPPING
  • 1/2 c. rice krispies
  • 1/4 c. packed brown sugar
  • 1/4 c. chopped pecans or walnuts, to your taste
  • 2 T. butter, melted

Directions
  1. Cream butter & sugar
  2. Beat in eggs, milk and vanilla
  3. Stir in squash.
  4. Pour into a greased 11 x 7 baking pan.
  5. Bake uncovered at 350 till almost set (about 45 min.)
  6. Combine topping ingredients and sprinkle over squash mixture.
  7. Return to oven for 5-10 min. or till bubbly and browned.
