Swedish Meatballs

- 3/4 pound ground white turkey shopping list
- 1/4 pound sweet italian chicken sausage shopping list
- 3 tablespoons seasoned bread crumbs shopping list
- 3 cloves garlic, chopped shopping list
- 1/2 small yellow onion, finely chopped (this adds moisture and flavor) shopping list
- 1 egg shopping list
- salt, pepper shopping list
- 1 teaspoon all spice shopping list
- 2 tablespoons freshly grated parmesian cheese shopping list
- 3 tablespoons olive oil shopping list
- 3 to 4 tablespoons flour shopping list
- salt, pepper shopping list
- 1 1/2 to 2 cups low sodium chicken stock or more (depends on how thick you like the gravy) shopping list
- 1/2 cup sliced or chopped mushrooms (I used shitake the last time, but crimini work well) shopping list
- 1 tablespoon olive oil shopping list
- 2 cloves garlic, chopped shopping list
How to make it
- Preheat oven to 325 degrees. Either spray a cookie sheet with cooking spray, or I use a 'silpat'.
- Mix first 9 ingredients (including parmesian cheese) with your hands, in a bowl.
- Roll in 1 1/2 inch balls and lay on cookie sheet.
- Cook in 325 degree oven for 20 min, and turn after 10 min. of cooking.
- While meatballs are cooking, heat olive oil in a saucepan over medium heat.
- Add flour and whisk well.
- Cook four in the oil for 1 to 2 min.
- Add Salt, pepper (to taste), and chicken stock (add the 1 1/2 cup first, let thicken, then see if you want to add more).
- Saute garlic in olive oil over medium heat for a couple minutes until transulent.
- Add mushrooms to garlic and olive oil and saute for another couple mintues.
- Add garlic and mushroom to gravy.
- Sometimes this doesn't seem like enough gravy to me. If you want more gravy, stir equal amounts of chicken stock and flour in little bowl with a whisk and add it to gravy. Then, add more chicken stock to thin it out again.
- (After the 20 min. in the oven), take meatballs out of oven and place into warm gravy and spoon gravy over meatballs and let them warm together for a minute or two.
- Serve over pasta or rice.
