How to make it

  • Preheat oven to 325 degrees. Either spray a cookie sheet with cooking spray, or I use a 'silpat'.
  • Mix first 9 ingredients (including parmesian cheese) with your hands, in a bowl.
  • Roll in 1 1/2 inch balls and lay on cookie sheet.
  • Cook in 325 degree oven for 20 min, and turn after 10 min. of cooking.
  • While meatballs are cooking, heat olive oil in a saucepan over medium heat.
  • Add flour and whisk well.
  • Cook four in the oil for 1 to 2 min.
  • Add Salt, pepper (to taste), and chicken stock (add the 1 1/2 cup first, let thicken, then see if you want to add more).
  • Saute garlic in olive oil over medium heat for a couple minutes until transulent.
  • Add mushrooms to garlic and olive oil and saute for another couple mintues.
  • Add garlic and mushroom to gravy.
  • Sometimes this doesn't seem like enough gravy to me. If you want more gravy, stir equal amounts of chicken stock and flour in little bowl with a whisk and add it to gravy. Then, add more chicken stock to thin it out again.
  • (After the 20 min. in the oven), take meatballs out of oven and place into warm gravy and spoon gravy over meatballs and let them warm together for a minute or two.
  • Serve over pasta or rice.
