Ingredients
  • Cake:
  • 1 package apple-cinnamon quick breadmix
  • *Pillsbury® makes an Apple-Cinnamon Quick Breadmix
  • 1 cup apple, peeled and chopped
  • 3/4 cup water
  • 3 Tbsp. Irish Whiskey, good quality
  • 1/4 cup vegetable oil
  • 1 egg
  • Caramel:
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup butter
  • 8 ounce carton heavy whipped cream, divided
  • 1/3 cup chopped walnuts
  • Topping:
  • Remaining heavy whipping cream
  • 4 Tbsp. confectioners' sugar
  • 3 Tbsp. Irish Whiskey
  • 1/4 tsp. cinnamon

Directions
  1. Preheat oven to 350° F.
  2. In small sauce pan over low heat, combine brown sugar, butter and 2 tablespoons whipping cream.
  3. Cook and stir just until butter is melted.
  4. Remove from heat.
  5. Stir in walnuts.
  6. Pour mixture into bottom of an ungreased 9 inch round cake pan or 9 inch square pan.
  7. Set aside.
  8. In a large bowl, combine all cake ingredients.
  9. Stir 60 - 70 strokes by hand until mix is moistened.
  10. Carefully spoon batter over caramel mixture, making sure caramel is completely covered.
  11. Bake for 40-50 minutes or until toothpick inserted in center comes out clean.
  12. Cool for a minute or so, then invert onto a serving plate.
  13. Cool completely.
  14. Just before serving, in a small bowl, beat remaining whipping cream until soft peaks form.
  15. Add powdered sugar and whiskey.
  16. Beat until stiff peaks form.
  17. Spread whipped cream mixture on top of cake.
  18. Dust lightly with cinnamon.
  19. Store in refrigerator.
  20. This dessert makes 10 servings.
