Ingredients
  • 1- (8-inch square pan) of cornbread about 1 pound cut into 1/2 inch cubes
  • 2- teaspoons oil
  • 1- large onion diced
  • 1/2 - teaspoon poultry seasoning
  • 1/2- teaspoon dried oregano
  • 1- teaspoon hot chili powder
  • 1- ( 15 ounce) can of golden hominy rinsed and drained
  • 2- ( 4 ounce) cans diced green chiles drained
  • 1- cup roasted red peppers chopped
  • 1- ( 14 ounce) can low- sodium chicken broth
  • 1- cup water
  • 4 -tablepoons butter

Directions
  1. Preheat oven to 350 degrees F.
  2. place cornbread on baking sheet
  3. bake 10 minutes or until toasted
  4. heat oil in a large skillet
  5. add onion, poultry seasoning, butter, and chili powder saute 5 minutes.........
  6. combine onion mixture, cornbread, hominy, chiles, red peppers, chicken broth, and water.
  7. toss well ......
  8. place in baking dish 13x9 casserole and bake for 20 minutes
  9. serves 12
