Ingredients

How to make it

  • Mix flour & salt together in a bowl
  • Rub shortening into flour with fingers until the mixture has a fine even texture
  • Stir in water to make a soft dough - add more water if needed
  • Knead on a lightly floured board until smooth - about 2 - 3 mins
  • Wrap in plastic & let rest for 20 - 30 mins
  • Divide dough into 8 equal pieces, keeping pieces covered so they don't dry out
  • Form a piece of dough into a ball & then on a lightly floured board, roll out thinly to an approx 10 inch round, turning over several times
  • Set aside & stack between wax paper
  • Repeat with rest of dough
  • Heat an ungreased, large heavy skillet to med/high heat
  • Place a tortilla in skillet & cook until the top is bubbly & the bottom is flecked with brown
  • Turn it over & cook the other side
  • If they puff up, flatten with spatula

    Hi Polly, When I made these I put them into a big zip-lock bag as soon as they were cool. I froze the ones I didn't use right away in that bag & they thawed out just as fresh.

    You should create a cookbook if you haven't already! I buy these and they never stay fresh long enough.
    I will try these and see how it goes. The flavor of homemade ones are something else. There's a restaurant in Huntington Beach, CA here that serves fresh ones made by hand...really awesome flavor.
    How would you recommend keeping them fresh, provided they last that long!
