Potato Fritters

This is a good "different" southern side dish to use for breakfast, or as a side dish.
Ingredients
- 1 1/2 c. frozen hash browns shopping list
- 2 large eggs, separated, shopping list
- 3/4 tsp salt shopping list
- 1/3 c. sifted, all purpose flour shopping list
- 1/3 c. cooking oil shopping list
How to make it
- Rinse frozen potatoes in hot water until defrosted, drain
- In mixing bowl beat egg whites with salt until stiff peaks.
- In another bowl beat yolks lightly, pour over egg whites. Fold.
- Sprinkle in flour, fold, fold in potatoes.
- Heat oil
- Drop batter by tablespoons.
- Fry one min on each side.
