Macaroni Soup Recipe
MACARONI SOUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Fargo Estate in Denton, Texas in 1986.

Ingredients
  • 4 tablespoons extra virgin olive oil
  • 1 red onion peeled and finely chopped
  • 2 medium carrots peeled and cubed
  • 3 medium potatoes peeled and cubed
  • 1 small Savoy cabbage cored and sliced
  • 1 hot Italian sausage sliced
  • 6 medium ripe tomatoes skinned and chopped
  • 1 vegetable stock cube
  • 1 celery stalk chopped
  • 1 package macaroni

Directions
  1. Place olive oil in a pan and fry onions with sausage on low heat for 2 minutes
  2. Add cabbage, potatoes, carrots and celery and cook until it is all soft.
  3. Add tomatoes and vegetable stock cube then cover with water and simmer 30 minutes.
  4. Add salt and pepper to taste.
  5. Boil macaroni until it is half cooked then drain and add to the vegetables.
  6. Simmer until pasta is cooked and serve with grated parmesan cheese.
