How to make it

  • Preheat oven to 425F degrees.
  • Lightly grease mini muffin pans.
  • In medium bowl, stir together flour, cornmeal, sugar, baking powder, salt and dash of cayenne pepper.
  • Stir in 3/4 cup cheese. In small bowl,combine egg, buttermilk and melted butter.
  • Add egg mixture all at once to flour mixture.
  • Stir until just moistened.
  • Batter will thicken upon standing.
  • Spoon batter into prepared muffin pans.
  • Fill 3/4 full.
  • Sprinkle tops with desired toppings.
  • Bake for 8 to 10 minutes or until toothpick inserted comes out clean.
  • Cool in muffin cups on wire rack for 5 minutes.
  • Remove from muffin tin and serve warm.
  • Note: muffin yield depends on size of tins. largewr muffins take longer to bake!
