Smoked Chedder Muffins

- Smoked Cheddar Mini Muffins shopping list
- 1/2 cup all-purpose flour shopping list
- 1/2 cup yellow cornmeal shopping list
- 2 tablespoons raw sugar shopping list
- 1 1/2 teaspoons baking powder shopping list
- 1/8 teaspoon kosher salt shopping list
- cayenne pepper shopping list
- 3/4 cup smoked cheddar cheese, shredded shopping list
- 1 egg shopping list
- 1/2 cup buttermilk shopping list
- 2 tablespoons butter, melted shopping list
- toppings: bacon bits, poppy seeds, sesame seeds, shredded cheddar cheese shopping list
How to make it
- Preheat oven to 425F degrees.
- Lightly grease mini muffin pans.
- In medium bowl, stir together flour, cornmeal, sugar, baking powder, salt and dash of cayenne pepper.
- Stir in 3/4 cup cheese. In small bowl,combine egg, buttermilk and melted butter.
- Add egg mixture all at once to flour mixture.
- Stir until just moistened.
- Batter will thicken upon standing.
- Spoon batter into prepared muffin pans.
- Fill 3/4 full.
- Sprinkle tops with desired toppings.
- Bake for 8 to 10 minutes or until toothpick inserted comes out clean.
- Cool in muffin cups on wire rack for 5 minutes.
- Remove from muffin tin and serve warm.
- Note: muffin yield depends on size of tins. largewr muffins take longer to bake!
