Loved it with a few changes. I used the pork rind pie crust here at group recipes, baked on a parchment lined bottom of a 10" springform pan for about 12 minutes, till it was browning around the edges. I used 1 1/2 times the quantities in the recipe for the larger pan. I used fontina instead of gouda, because I dont like smoked cheeses, and I pulsed the cheese with 1/4 of the mushrooms a few times to get the cheese finely chopped. The mushrooms keep it from reclumping. I surrounded the springform pan with aluminum foil and set it in a boiling water bath in the oven, baked for an hour at 325. Removed it from the bath, removed the foil and sprinkled with a 50/50 mozzarella parmesan mix and baked another 15 minutes. Let it sit 10 -15 minutes, run a knife around the edge and pop off the sides of the pan.
