Debs Southern Sweet Potato Biscuits

- 1 lb. cooked sweet potatoes shopping list
- 1 cup light brown sugar shopping list
- 1/4 cup water shopping list
- 2 1/4 cup Bisquick or Jiffy baking mix shopping list
How to make it
- Preheat oven to 350.
- Cool and peel sweet potatoaes. Mix together all ingredients thoroughly. The consistency of the mixture will not resemble regular biscuits – it will be much wetter. (Keeping your hands floured will make handling the mixture a lot easier).
- Flour table well with baking mix. Roll biscuit mixture to 1/2-inch thickness and cut with biscuit or cookie cutter or pinch and roll individual biscuits. Place on greased baking sheet.
- Bake until bottom is light golden brown, 8-12 minutes ~ don’t be fooled by the appearance ~ these biscuits don’t rise very much, and looks can be deceiving. DON’T OVERCOOK ~ these biscuits are really moist. Serve warm with butter. Yumm!
