  • 1 lb. cooked sweet potatoes
  • 1 cup light brown sugar
  • 1/4 cup water
  • 2 1/4 cup Bisquick or Jiffy baking mix

Directions
  1. Preheat oven to 350.
  2. Cool and peel sweet potatoaes. Mix together all ingredients thoroughly. The consistency of the mixture will not resemble regular biscuits – it will be much wetter. (Keeping your hands floured will make handling the mixture a lot easier).
  3. Flour table well with baking mix. Roll biscuit mixture to 1/2-inch thickness and cut with biscuit or cookie cutter or pinch and roll individual biscuits. Place on greased baking sheet.
  4. Bake until bottom is light golden brown, 8-12 minutes ~ don’t be fooled by the appearance ~ these biscuits don’t rise very much, and looks can be deceiving. DON’T OVERCOOK ~ these biscuits are really moist. Serve warm with butter. Yumm!
