How to make it

  • Preheat oven to 350.
  • Cool and peel sweet potatoaes. Mix together all ingredients thoroughly. The consistency of the mixture will not resemble regular biscuits – it will be much wetter. (Keeping your hands floured will make handling the mixture a lot easier).
  • Flour table well with baking mix. Roll biscuit mixture to 1/2-inch thickness and cut with biscuit or cookie cutter or pinch and roll individual biscuits. Place on greased baking sheet.
  • Bake until bottom is light golden brown, 8-12 minutes ~ don’t be fooled by the appearance ~ these biscuits don’t rise very much, and looks can be deceiving. DON’T OVERCOOK ~ these biscuits are really moist. Serve warm with butter. Yumm!
