  • 1-pound can diced beets, reserving 1/3 cup liquid
  • 2 tablespoons sugar
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1/4 cup vinegar
  • 2 tablespoons butter

Directions
  1. Drain one 1-pound can diced beets, reserving 1/3 cup liquid.
  2. In saucepan, combine 2 tablespoons sugar, 1 tablespoon constarch, and 1/4 teaspoon salt.
  3. Stir in reserved liquid, 1/4 cup vinegar, and 2 tablespoons butter.
  4. Cook and stir till mixture thickens and bubbles.
  5. Add beats; heat through.
  6. Serves 4 or 5.
