Scallop Hopping John Recipe
Scallops add a special flavor to this traditrional Southern holiday dish which can be used as a side dish or even a salad

Ingredients
  • 1/2 lb bay scallops
  • salt and pepper to taste
  • 2 Tbs olive oil
  • 1 1/2 cups cooked long grain white rice
  • 1 cup fresh or frozen black eyed peas cooked
  • 1/2 cup cup chopped red onion
  • 1/2 cup chopped celery
  • 2 Tbs fresh chopped parsley
  • 1 tsp Creole seasoning

Directions
  1. Pat scallops dry and season with salt and pepper
  2. In a large skillet, heat olive oil and cook scallops just until opague, about 2 minutes per side.
  3. Combine remaining ingrdients in a large bowl and add the scallops
  4. Serve immediately
