How to make it

  • in a large cast iron pot fry the bacon pieces until softened and golden brown.
  • add chopped onion and celery. cook until softened with the bacon and bacon fat.
  • add bag of frozen crowder peas and enough water to cover the peas by 1/2 inch.
  • return to heat and add spike seasoning and celery or cilantro leaves.
  • cook at medium low for 45 minutes. check periodically for water level and add more water as needed.

    LOVE crowder peas...I so miss them! I remember the fresh ones in the summer when I was growing up. Alas, they don't even have the frozen ones in NJ! Great recipe, thanks so much!
