Tagliatelle alla Biellese

- 5.33 ounces or 150 g butter shopping list
- 3.5 ounces or 100 g grated aged hard cheese shopping list
- 4-5 tablespoons milk shopping list
- salt and pepper shopping list
- grated nutmeg shopping list
- about 1 pound or 400 g egg pasta, mine was homemade shopping list
How to make it
- boil salted water for cooking the pasta
- don't cook the pasta until almost ready to eat it, but if fresh it will cook in 3 minutes or less, if dried plan to cook it 1 minute less than the box says.
- Grate the cheese so as to be ready for cooking the sauce
- melt the butter over low heat, then stir in the cheese and then enough milk to make a creamy sauce, as thick as cream.
- Taste and adjust fr salt and pepper.
- Grate nutmeg over it until the perfume clouds your senses.
- add the drained egg pasta and toss it all together really well for about a minute.
- serve immediately, possibly with more nutmeg depending on taste.
- does not need more cheese, because it IS cheese
