Twice Baked Potatoes Recipe
Twice baked potatoes take a little longer in the oven, but they're a super cheap version of what you get at restaurants and tastier, too!

Ingredients
  • 5 medium sized potatoes, scrubbed and poked with a knife
  • Olive oil
  • Garlic Powder
  • Seasoned Salt
  • Bacon bits
  • Shredded Cheddar Cheese
  • 2 tbs butter
  • S & P
  • Sour cream

Directions
  1. Heat oven to 450.
  2. Pour olive oil into a small plate, less than 1/4 cup.
  3. Roll each potato in the olive oil, then transfer to second clean plate.
  4. Season both sides with garlic and salt.
  5. Place directly on rack in oven, (You may want to place a cookie sheet on the rack below to catch any drippings.)
  6. Cook 1 hour.
  7. Remove from oven.
  8. Turn on broiler.
  9. Slice each potato in half.
  10. Scoop out middles with a small spoon and place in a medium size bowl, careful not to break the skins.
  11. Leave 1/4 inch of potato inside each half to help hold it's shape.
  12. Add butter and bacon bits to potatoes, mash gently.
  13. Add S & P, if desired.
  14. Refill each potato half with mixture.
  15. Top with cheddar cheese.
  16. Broil 5 minutes, or until lightly browned.
  17. Serve with sour cream.
