In summer, we are all usually together as a family. Many of us like a little morning eye-opener. I found a refreshing new twist on Irish Coffee, "Italian Style" :) I'm sure somebody must make this near where the Rum is made.

Ingredients
  • 2 Shots Espresso (If I were to be formal I might say Demi-tasse)
  • 2 Shots Medium-Dark Rum; Use an in-expensive good Rum; Try Cruzan, a brand from St. Croix. Of course, You may be like my wife and prefer Blackstrap Rum. It's up to You! :) )
  • 4-6 Ice Cubes
  • 6-8 fl-ounce Club Soda. (Or your fave sparkling water.)
  • Lemon Rind Twist. (Use a wider rind for better citrus aroma & flavor.)

Directions
  1. Cut your Lemon Rind Twist; Width as you like.
  2. Make your 2 shots Espresso. (I use an inexpensive steam espresso maker; Takes only 5-8 mins for 2 shots.)
  3. While Espresso is Hot; Add Lemon Rind to Hot Coffee.
  4. Let Hot Espresso sit with Lemon Rind for 2-3 mins allowing aroma and flavor from Citrus to infuse coffee.
  5. I like mine black. Here you may like to add cream or sugar. The Rum itself is already sweet enough for me also.
  6. Add Ice cubes to Coffee creating an Ice-Coffee.
  7. Add Rum to Ice Coffee. (We don't add rum to the hot coffee; it evaporates the alcohol content and weakens the flavor.)
  8. In a tall glass; Mix 6-8 fl-ounces Club Soda with Iced Coffee.
  9. Find a comfortable spot outside by the water's edge; with the seagulls just far enough away not to "rain" on your parade.
  10. Relax and Pickup the Morning Paper!

Sounds great! A new twist on a coffe drink is right! High 5! Thanks for sharing.

Very nice gets my 5. I just don't know if I can wait for warm weather to try this one.

Not only unusual but very interesting....I've never heard of blackstrap rum but you can be sure I'll look for it next trip to the liquor store...I love the name of it too...:)

Since winter is roaring down upon us, and I like a little "warmer-upper", I may have to go steam up the bathroom so I can try the Iced Coffee rum version of this...sounds delicious!

Wow, i'd like me a sip of that, sounds devine!
