Wilted Greens On The Side

- 2-3 T olive oil shopping list
- 1 med onion, chopped shopping list
- 1-2 cloves minced garlic shopping list
- 1 chopped and seeded red or green bell pepper (or both) shopping list
- 1/4 lb swiss card or beet or dandylion greens shopping list
- 1/4 lb baby spinach shopping list
- salt & pepper to taste shopping list
- red chili flakes (optional for heat) shopping list
- Cherry or grape tomatoes (optional garnish) shopping list
How to make it
- In a medium skillit heat the oil and add the garlic and onions
- Add the bell peppers and cook till soft and the onions are translucnent
- Add the greens and cover and cook till wilted (about 3-4 minutes)
- Salt and pepper to taste
- I like to add cherry or grape tomatoes as a garnish and for extra flavor.
- Serve with your favorite meat dish or with bread and salad for a light meal
