Wilted Greens On The Side Recipe
A great way to get your green in. My husband who hates leafy green things loves this.

Ingredients
  • 2-3 T olive oil
  • 1 med onion, chopped
  • 1-2 cloves minced garlic
  • 1 chopped and seeded red or green bell pepper (or both)
  • 1/4 lb swiss card or beet or dandylion greens
  • 1/4 lb baby spinach
  • salt & pepper to taste
  • red chili flakes (optional for heat)
  • Cherry or grape tomatoes (optional garnish)

Directions
  1. In a medium skillit heat the oil and add the garlic and onions
  2. Add the bell peppers and cook till soft and the onions are translucnent
  3. Add the greens and cover and cook till wilted (about 3-4 minutes)
  4. Salt and pepper to taste
  5. I like to add cherry or grape tomatoes as a garnish and for extra flavor.
  6. Serve with your favorite meat dish or with bread and salad for a light meal
