ASIAN FAJITAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cannon Estate in Addison, Texas in 1990. This makes 12 fajitas and 2 fajitas per serving is a hearty meal. Enjoy

Ingredients
  • 1/4 cup soy sauce
  • 2 tablespoons rice wine
  • 2 tablespoons lime juice
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon minced ginger
  • 1/2 teaspoon five spice powder
  • 1 pound flank steak thinly sliced into strips across the grain
  • 2 tablespoons cooking oil
  • 1/2 onion cut into matchsticks
  • 6 ounces asparagus spears trimmed and cut into 2” lengths
  • 1 yellow squash cut into matchsticks
  • Salsa:
  • 2 large tomatoes coarsely chopped
  • 1/2 small white onion chopped
  • 2 Serrano chilies seeded and minced
  • 2 tablespoons chopped cilantro
  • 2 tablespoons rice vinegar
  • 2 teaspoons chili paste
  • 1/2 teaspoon salt
  • Sour cream mixture:
  • 1 cup sour cream
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon white pepper
  • 2 cups shredded lettuce
  • 12 flour tortillas warmed

Directions
  1. Combine all marinade ingredients in a sealable plastic bag.
  2. Add beef then seal bag and turn to evenly coat.
  3. Let stand for one hour or refrigerate overnight.
  4. One hour before cooking combine salsa ingredients and sour cream mixture separately. Refrigerate 30 minutes.
  5. Strain beef reserving marinade then place a wok over high heat until hot.
  6. Add cooking oil swirling to coat sides then add beef and stir fry 3 minutes.
  7. Add onion, asparagus, squash and 1/4 cup of then reserved marinade and stir fry 5 minutes.
  8. Remove from heat.
  9. Place small portion of beef on a warm tortilla then top with lettuce, salsa and sour cream.
