Ingredients
  • 4.5oz butter
  • 2oz muscovado sugar
  • 2oz golden caster sugar
  • 3 large free-range eggs
  • Two large bananas, (best when soft) *peeled and squished*
  • 5.5oz self-raising flour
  • 2oz ground rice, semolina or polenta
  • A splash of vanilla essence (OR a teaspoonful of ground mixed spice)
  • Chopped walnuts (Sultanas or chopped dates if you like, but NOT chocolate chips - trust me, that doesn't work)

Directions
  1. Cream butter and sugar, add eggs and beat well, then add other ingredients and mix in gently.Tip into greased and floured tin (no need to line it, the cake won't stick if you take it out of the tin while it's still hot). Bake at 220degC for 15 mins, then turn the oven down to 190degC and continue cooking till it's ready.
  2. (Generously fills a 1lb loaf tin)

Looks good to me. Do you like oatmeal?. I posted a recipe for Oatmeal on the go. I made a bunch of them to take running with me. I like them cus there not sweet and they are easy to break off a chunk while your running. I ran 5 miles this morning and the stadium stairs and the football arena..that kicks butt!
