Ingredients
  • 1.5 cup mashed Banana (approx. 5 medium bananas)
  • 2 tbsp Baking Powder
  • 1 tsp Baking Soda
  • 0.25 tsp Salt
  • 1/4 cup cane sugar
  • 1 tbsp Pure Honey
  • 1/2 cup organic applesauce
  • 0.5 cup Plain unsweetened yogurt
  • 1 large egg
  • 2 tsp Vanilla Extract
  • 1 tbsp ground cinnamon (you can add more or less depending on taste)
  • 2 cups all-purpose flour

Directions
  1. Preheat oven to 350 degrees. if muffin tins are not non-stick/silicon, lightly grease muffin tins.
  2. Mix dry ingredients (baking powder, baking soda, salt, cinnamon and flour) in a large bowl. Mix wet ingredients (all remaining ingredients) in a separate bowl.
  3. Pour wet mixture into the bowl with dry ingredients and mix until just combined (the more you stir, the harder the muffins will be, so you want to stir as few times as possible)
  4. Spoon mixture into muffin tins (about 3/4 full to give room to rise) and bake for 18-22 minutes or until toothpick test says they're done

Bananas are best for this when they are over-ripe....almost black. Makes a great moist banana bread/muffin. Yummy and a high 5!!

Alterations


Sounds yummy! As a vegan, I plan to try this replacing the honey with brown rice syrup, the yogurt with silken tofu or soy yogurt and just omitting the egg.


those are great ideas - also i just made a batch where i replaced both the cane sugar and the honey with 3.5g of Stevia Sweetener.

For the egg - instead of just leaving it out, instead mix 1 tbsp ground flax seed with 3 tbsp of water and this replaces 1 egg in baking.
