Delicious combo of sweet and spicy while remaining fairly healthy

Ingredients
  • * 1 pound chopped peeled sweet potato
  • * 2 tablespoons maple syrup
  • * 2 tablespoons 2% milk
  • * 1 tablespoon butter or margarine
  • * 1/4 teaspoon salt
  • * 1/8 teaspoon black pepper
  • * 1/2 canned chipotle chile in adobo sauce, pureed

Directions
  1. In a pan with water add sweet potatoes (make sure they are covered) and bring to a boil
  2. reduce heat and simmer until sweet potatoes are cooked
  3. drain water from pan, leaving the sweet potatoes in the pan
  4. add all other ingredients and mash
