  • 1 1-pound 2-ounce can sweet potatoes
  • 1 8 3/4-ounce can crushed pineapple, drained
  • 1 egg
  • 2 tablespoons melted butter
  • 1/2 teaspoon salt
  • dash pepper
  • 1/4 teaspoon ground nutmeg.
  • 1/2 cup whole cranberry sauce, plus 8 tablespoons full

Directions
  1. Whip together one 1-pound 2-ounce can sweet potatoes, and 8 3/4-ounce can crushed pineapple, drained, 1 egg, 2 tablespoons melted butter, 1/2 teaspoon salt, dash pepper, and 1/4 teaspoon ground nutmeg.
  2. Swirl in 1/2 cup whole cranberry sauce.
  3. Spoon into 8 greased ramekins.
  4. Top each with 1 tablespoon whole cranberry sauce.
  5. Bake at 375 degrees for 40 minutes.
  6. Makes 8 servings.
