How to make it

  • Prepare pudding as package directs
  • . Cool completely
  • . Meanwhile in a mixing bowl, dissolve gelatin in water.
  • Drain pineapple, reserving juice and set pineapple aside.
  • Add cold water to juice to make 2 cups. Stir into gelatin.
  • Chill until mixture begins to thicken
  • . Add cooled pudding and beat well
  • . Remove 1 cup and set aside.
  • Add pineapple to remaining mixture
  • . Pour into a 13x9x2 inch dish.
  • Refrigerate until set.
  • Fold whipped cream into reserved gelatin-pudding mixture.
  • Spread over first layer
  • . Refrigerate until serving.
