alton brown,explains it completly and has a very good brine recipe if turkey is brined it will be moist

combine all ingredients except ice water
bring to boil,,stir,,remove from heat,,,,cool, refrigerate, completly
put in bucket, with ice water..insert turkey, breast first....................................
