How to make it

  • Stack spinach and cut into 1/2 in. strips (called chiffonade)
  • In skillet, heat oil and add shallots and cook until tender
  • Turn heat up to med-high
  • Add spinach and salt and pepper
  • Saute until wilted, about 3 minutes
