Sauteed Baby Spinach With Shallots

- 1 1/2 lb. baby spinach, washed and stems removed shopping list
- 2 large shallots, thinly sliced shopping list
- 3 tbls. olive oil shopping list
- salt and pepper, to taste shopping list
How to make it
- Stack spinach and cut into 1/2 in. strips (called chiffonade)
- In skillet, heat oil and add shallots and cook until tender
- Turn heat up to med-high
- Add spinach and salt and pepper
- Saute until wilted, about 3 minutes
