Guacamole from Elena Zelayeta

- Serves 4
Guacamole can stand on it's own and be eaten with corn chips. It is wonderful on top of a green salad, or served with cold chicken. the sky is the limit!! Avocados are in season in the winter.
Ingredients
- 2 ripe avocados, mash with a fork shopping list
- 2 ripe tomatoes, cut in half inch chunks. shopping list
- a bunch of green onions, chopped shopping list
- good fresh salsa, with chiles as hot as desired. Amount to taste (I have used tabasco to help balance flavors . shopping list
- salt to taste shopping list
- lemon juice to taste shopping list
- fresh cilantro optional (it is usually in fresh salsa) shopping list
How to make it
- DO NOT MAKE AHEAD of TIME, and use fresh ingredients.
- After mashing avocado into chunky smooth texture, dump everything else into the bowl and stir together to combine. (the lemon juice and tomatoes will help keep the avocado from oxidizing. )
- Serve with a smile! corn tortilla chips are perfect. Also, minitindel's frozen margaritas !!

Oh my gosh, GUACAMOLE!!! Besides loving soups, I LOVE GUACAMOLE and this recipe looks soooooooooo delicious that I'll be preparing it this week for sure. High 5 for a winning Guacamole recipe.
