Ingredients
  • 2 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 cup brown sugar
  • 1/8 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 3/4 cup vegetable oil
  • 2/3 cup crushed pecans
  • 1 egg
  • 1/2 teaspoon salt
  • 2 teaspoons soda
  • 1 cup buttermilk (may substitute 1 tablespoon lemon juice or vinegar plus milk to make 1 cup. Let stand 5 minutes before adding to batter

Directions
  1. Preheat oven to 350.
  2. Combine first 6 ingredients till crumbs are formed.
  3. Remove 1/3 cup crumbs.
  4. In a separate bowl, mix 2/3 cup crushed pecans and crumbs.
  5. Set aside for topping.
  6. Add remaining ingredients and mix well.
  7. Pour into a greased 8" x 11.5" .glass baking dish.
  8. Sprinkle topping over batter.
  9. Bake for 30 minutes or until seems firm on top.
  10. Serve warm

Sounds delicious, jmatthew! I love coffee cake - so does hubby - I just made one off of AR last week, but too much butter in it. This sounds good, can I sub butter for the oil, you think?
