Quick Alfredo Sauce

- 1 pint (16 oz) of heavy whipping cream (Not "Whipped Cream") shopping list
- 1-1/2 cup (6 oz) of fresh parmesan cheese (not the powdered stuff) shopping list
- 1/2 cup (one stick) of salted butter shopping list
How to make it
- Open a nice bottle of wine and pour yourself a tall glass
- Pour the carton of Heavy Whipping Cream into a medium sauce pan and place on medium-low heat... NEVER allow to boil
- Add stick of butter and allow to slowly melt
- Grab a whisk and slowly pour Parmesan cheese into the Cream in increments
- When adding the cheese, be sure to do only a couple of ounces at a time
- Continuously, slowly whisk cheese into cream until you see that the cheese has virtually disolved, entirely (this takes the majority of the time, and requires you to stand and stir, and stir, and stir...)
- You can 'taste' the sauce with a spatula or spoon- just a little on your tongue will tell you if the cheese is still 'gritty', or if it has melted
- Serve IMMEDIATELY with your choice of pastas- because of the thickness of the sauce, it's best served with some type of noodles
- Remember, the point is that this is a quick and easy sauce- you might spice it up a bit with a little garlic, chili flakes or sprinkle fresh basil on top... whatever closes the deal for you
- If you still have any wine left in your glass... you need more stress in your life
