Banana - Craisin Ginger Scones

- 1 flour shopping list
- 1 cup spelt flour shopping list
- 1/2 tsp ground ginger shopping list
- 1/2 tbsp baking powder shopping list
- 1.5 oz cold butter, cubed shopping list
- 1 large, very ripe banana shopping list
- 1 tbsp skim milk shopping list
- 1 tsp vanilla shopping list
- 1 tbsp brown sugar shopping list
- 2 tbsp dried cranberries shopping list
How to make it
- Preheat the oven to 425 degrees. Grease a large baking sheet.
- Stir the dry ingredients together in a large bowl.
- Cut in the butter until the mixture looks mealy.
- Mash the banana with milk, vanilla and sugar.
- Add the banana mixture to the dry ingredients and stir until partially combined, stir in the cranberries, then turn out onto a countertop.
- Knead lightly with your fingers until the dough just holds together.
- Pat out 3/4" thick.
- Cut into circles.
- Bake 10 minutes, cool on wire racks.
