How to make it

  • Preheat oven to 450F, mist a cookie sheet with non-stick spray.
  • Combine chili powder, garlic powder and salt in a small dish, set aside.
  • Peel and halve chayotes lengthwise, removing seeds.
  • Cut into wedges and sprinkle evenly with the spice mixture.
  • Place wedges on sheet pan, mist lightly with nonstick spray.
  • Roast 20 minutes, flip wedges and roast a further 10-15 minutes, until golden brown and tender.
  • Serve immediately.

    In Sydney Australia we call them CHOKO, CHOKOES Funny When I was a kid growing up in 1960's we had them growing on the vine & didn't really know what to do with them - I was brought up on Polish Bohemian (Peasant Farm/Village) food. You couldn't give them away NOW I hardly see them at all CHOKOes are very bland & tend to take on the flavour of the spice they are cooked with YUM to this recipe Krystyna Down UNder
