So very good as a side with the Sauerbraten recipe posted earlier, the combination of flavors here is wonderful. We normally need to double this recipe. Enjoy!

Ingredients
  • 2 tablespoons butter
  • 2 1/2 cups red cabbage, thinly sliced
  • 1/2 cup granny smith apple, chopped
  • 1/4 red onion, finely chopped
  • 1 slice bacon, cooked and crumbled (or more)
  • 1/4 cup dry red wine
  • 2 tablespoons red wine vinegar

Directions
  1. Melt butter in skillet.
  2. Saute together the cabbage, apple, onion and bacon for about 6 minutes.
  3. Add red wine and red wine vinegar.
  4. Cover the skillet.
  5. Simmer for 10 minutes OR until cabbage is tender.
  6. Season with salt and pepper to taste.

I agree with you. Red cabbage is mostly overlooked in our world of cooking. This is such a simple, quick and delicious use of that veggie that it's almost amazing. Hope you enjoy it, otter!
