Ingredients

How to make it

  • Soak bean overnight.
  • Drain beans.
  • Combine beans and bay leaves in saucepan.
  • Add water to 3" above beans.
  • Bring to a boil.
  • Preheat oven to 350 degrees F.
  • Reduce heat.
  • Simmer for 45 minutes.
  • Drain BUT reserve 4 cups of cooking liquid.
  • Combine onion, salt pork, ketchup, brown sugar, sorghum and dry mustard in a Dutch oven or bean pot.
  • Stir in beans and 3 CUPS of cooking liquid.
  • Cover pot with foil.
  • Put lid on pot.
  • Bake approximately 2 1/2 hours OR until beans are tender.
  • Check liquid level occasionally.
  • Add more cooking liquid, if necessary.

    I didn't have nearly 4 cups of liquid left, so used water. We don't have sorghum here either so I used a combo of honey, molasses and maple syrup. Still good, though!
