Another from my Kentucky mother-in-law . I will always think of her when these are baking.. that is, if I could find sorghum up here in Yankee-land!

Ingredients
  • 1 pound dried lima beans OR bean of your choice
  • 2 bay leaves
  • 1 onion, cut into 6 wedges
  • 3 1/2 ounces salt pork, 1/4" dice
  • 3/4 cup ketchup
  • 1/2 cup brown sugar
  • 1/4 cup sorghum
  • 1 teaspoon dry mustard

Directions
  1. Soak bean overnight.
  2. Drain beans.
  3. Combine beans and bay leaves in saucepan.
  4. Add water to 3" above beans.
  5. Bring to a boil.
  6. Preheat oven to 350 degrees F.
  7. Reduce heat.
  8. Simmer for 45 minutes.
  9. Drain BUT reserve 4 cups of cooking liquid.
  10. Combine onion, salt pork, ketchup, brown sugar, sorghum and dry mustard in a Dutch oven or bean pot.
  11. Stir in beans and 3 CUPS of cooking liquid.
  12. Cover pot with foil.
  13. Put lid on pot.
  14. Bake approximately 2 1/2 hours OR until beans are tender.
  15. Check liquid level occasionally.
  16. Add more cooking liquid, if necessary.
