Sorghum Baked Beans

- 1 pound dried lima beans OR bean of your choice shopping list
- 2 bay leaves shopping list
- 1 onion, cut into 6 wedges shopping list
- 3 1/2 ounces salt pork, 1/4" dice shopping list
- 3/4 cup ketchup shopping list
- 1/2 cup brown sugar shopping list
- 1/4 cup sorghum shopping list
- 1 teaspoon dry mustard shopping list
How to make it
- Soak bean overnight.
- Drain beans.
- Combine beans and bay leaves in saucepan.
- Add water to 3" above beans.
- Bring to a boil.
- Preheat oven to 350 degrees F.
- Reduce heat.
- Simmer for 45 minutes.
- Drain BUT reserve 4 cups of cooking liquid.
- Combine onion, salt pork, ketchup, brown sugar, sorghum and dry mustard in a Dutch oven or bean pot.
- Stir in beans and 3 CUPS of cooking liquid.
- Cover pot with foil.
- Put lid on pot.
- Bake approximately 2 1/2 hours OR until beans are tender.
- Check liquid level occasionally.
- Add more cooking liquid, if necessary.
