Corn Chowder Recipe

This is the creamiest, cheesiest corn chowder.

Ingredients
- 1/2 onion, chopped
- 5 medium potatoes, chopped
- salt & pepper to taste
- 1/2 stick butter
- 1/2 lb. Velveeta cheese, chopped
- 2 cans creamed corn
- 1 pint half-and-half (or whole milk)
- 5-7 strips bacon, crumbled
Directions
- Simmer onion and potatoes in just enough water to cover them, until softened (not completely mushy). Do not drain. Add salt and pepper to taste. Add butter, Velveeta, corn, half-and-half*; stir. Crumble bacon on top. Cook over low heat one hour, stirring occasionally.
- *You could add chicken leftovers to this and then it's Chicken Corn Chowder.
