Ingredients

1/2 onion, chopped

5 medium potatoes, chopped

salt & pepper to taste

1/2 stick butter

1/2 lb. Velveeta cheese, chopped

2 cans creamed corn

1 pint half-and-half (or whole milk)

5-7 strips bacon, crumbled

Directions

Simmer onion and potatoes in just enough water to cover them, until softened (not completely mushy). Do not drain. Add salt and pepper to taste. Add butter, Velveeta, corn, half-and-half*; stir. Crumble bacon on top. Cook over low heat one hour, stirring occasionally.

*You could add chicken leftovers to this and then it's Chicken Corn Chowder.
