Ingredients

4 boneless skinless chicken breast

flour for dredging

salt

pepper

garlic powder

olive oil

butter

1 carton of button mushrooms or criminis

3 tbs butter

salt to taste

pepper to taste

dried thyme to taste

about 1/2 cup of beef broth(or chicken stock, i personally like the taste of beef)

slash of half and half

Directions

Season chicken breast with salt, pepper, and garlic powder. LIGHTLY dredge in flour, dusting off any remaining flour. Do NOT coat with a lot of flour. Heat pan to medium high heat, add about 2 tbs of olive oil, and 2 tbs butter. Add chicken breast and let cook and brown until juices run clear. Remove from heat, and about 2 more tbs of butter to pan. Add mushrooms, pepper, and thyme. If more butter is needed to soften mushrooms, add som. Once cooked down some add salt, and beef broth, let reduce to a nice sauce, then splash with some half and half. Serve on top of hot chicken. ENJOY
