Ingredients
  • 1 cup onion, chopped
  • 1 tablespoon butter
  • 1/2 teaspoon thyme
  • 1/4 teaspoon celery seed
  • 26 ounces chicken stock
  • 10 ounces corn, fresh or frozen (thawed)
  • 10 ounces lima beans, fresh or frozen (thawed)
  • 1 1/4 cups mashed potato flakes
  • 1 cup heavy cream
  • Salt and pepper to taste

Directions
  1. In butter, saute the onion until tender.
  2. Add thyme and celery seeds.
  3. Saute 30 seconds more.
  4. Add stock, limas and corn.
  5. Bring to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Whisk in potato flakes until smooth.
  8. Gradually stir in heavy cream.
  9. Salt and pepper to taste.
  10. Reheat soup, if necessary.

Easy is right! I could see myself making this so often my Michael would die if he had to see another kernel of corn. I love succotash, I love chowder, what a perfect blend. Great post!
