Succotash Chowder

- 1 cup onion, chopped shopping list
- 1 tablespoon butter shopping list
- 1/2 teaspoon thyme shopping list
- 1/4 teaspoon celery seed shopping list
- 26 ounces chicken stock shopping list
- 10 ounces corn, fresh or frozen (thawed) shopping list
- 10 ounces lima beans, fresh or frozen (thawed) shopping list
- 1 1/4 cups mashed potato flakes shopping list
- 1 cup heavy cream shopping list
- salt and pepper to taste shopping list
How to make it
- In butter, saute the onion until tender.
- Add thyme and celery seeds.
- Saute 30 seconds more.
- Add stock, limas and corn.
- Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Whisk in potato flakes until smooth.
- Gradually stir in heavy cream.
- Salt and pepper to taste.
- Reheat soup, if necessary.

Easy is right! I could see myself making this so often my Michael would die if he had to see another kernel of corn. I love succotash, I love chowder, what a perfect blend. Great post!
