Ingredients
  • 2 tsp Cajun seasoning
  • 1 tsp lemon pepper
  • 1/2 tsp salt
  • 4 boneless, skinless chicken breast halves (about 4 oz each)
  • lemon wedges (optional)

Directions
  1. Mix the Cajun seasoning, lemon pepper and salt in a small bowl. Sprinkle on both sides of the chicken.
  2. Place a large nonstick skillet over high heat until drops of water sprinkled into the skillet dance on the surface. Add the oil , tilting the pan to coat the surface.
  3. Add the chicken and cook for 3 minutes per side, or until the meat looks opaque. Serve garnished with the lemon wedges (if using) to squeeze over the chicken.
