Ingredients
  • 1 Coconut Crumb Pie Crust
  • 1 Cup Sweetened Coconut,toasted
  • 1/2 teaspoon Pure Coconut extract
  • 1 Pint Vanilla Ice Cream
  • 1 (14oz) Bag of frozen Mango Puree,thawed
  • 2 Tablespoons Confectioners' Sugar,(or) if you want it a little sweeter
  • 1 Tablespoon Lime Juice,Fresh
  • Combine the vanilla ice cream, coconut extract,and toasted coconut in a large bowl.
  • Mix until ingredients are well combined.
  • Push the mango puree through a mesh strainer to remove any strings or fibers.
  • Stir in the sugar and lime juice.
  • Turn half of the ice cream mixture in pie crust.
  • Top with half of the mango sauce,repeat.
  • Cover pie,and freeze,at least 4 hours.
