From Gatoula at Allrecipes.. whose Russian mother used to serve the filling as a meal! She turned it into a delectable mushroom pie in puff pastry. If made using smaller pieces of pastry, these could serve well as appetizers.

Ingredients
  • 1 tablespoon olive oil
  • 10 ounces fresh mushrooms of your choice, sliced
  • 1 large onion, chopped
  • 4 slices bacon, chopped
  • 3/4 cup heavy cream
  • 1 cup shredded cheese of your choice (Gatoula uses Swiss)
  • Salt and pepper to taste
  • 1 teaspoon fresh dill, chopped
  • 1 (17.25 ounce) package frozen puff pastry, thawed
  • 1 egg, beaten

Directions
  1. Preheat oven to 350 degrees F.
  2. Heat oil in skillet over medium-high heat.
  3. Add mushrooms, onion and bacon.
  4. Cook and stir for 5 minutes OR until vegetables are tender.
  5. Reduce heat to medium.
  6. Add cream and dill.
  7. Cook and stir for 10 minutes more.
  8. Remove from heat.
  9. Stir in cheese to melt.
  10. Place one sheet puff pastry on a well-oiled baking sheet.
  11. Carefully place mushroom mixture on top of pastry.
  12. Cover with second puff pastry sheet.
  13. Press edges together to make a seal.
  14. Poke hole in top pastry with fork.
  15. Brush pastry with beaten egg.
  16. Bake for 40 minutes OR until golden brown.
  17. Remove from oven.
  18. Cool.
  19. Cut and serve.

Wow, seeing this recipe just took me back. My mother used to make a mushroom pie when I was a child and everyone loved it. She stoped making it as we both got older. I will have to try this recipe. Thanks for the post and thanks for the memory.
