Chili Mac Recipe
While on holidays a few years ago, we had frozen "Chili Mac" entrees for a quick lunch, which we just loved. We could not find these anywhere in Canada so I created my own version.

Ingredients
  • 3/4 cup elbow macaroni
  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup chopped green pepper
  • 14 oz can tomato sauce
  • 14 oz can Heinz Baked Beans in Tomato Sauce
  • 14 oz can diced tomatoes
  • 1 Tbs chili powder
  • 1/4 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper (or to taste)
  • 1/4 tsp black pepper
  • grated cheddar cheese

Directions
  1. Preheat oven to 350°F
  2. cook macaroni according to package directions, drain and set aside
  3. meanwhile, in a large nonstick frypan, cook the beef, onion, garlic & green pepper over medium heat until meat is no longer pink, making sure to break up the beef into small pieces
  4. stir in the tomato sauce, tomatoes, beans and seasonings
  5. add macaroni to beef mixture
  6. transfer to a 13-in. x 9-in. x 2-in. baking dish coated with nonstick cooking spray
  7. bake at 350°F for 25-30 minutes or until bubbly
  8. sprinkle with cheese & bake 3-4 minutes longer or until cheese is melted
  9. serve with a Caesar Salad & garlic toast
