Lima Bean Patties

- 2 cups frozen lima beans shopping list
- 1/4 cup roughly chopped chives shopping list
- small handful of cilantro leaves shopping list
- small handful of parsley leaves shopping list
- 1/2 teaspoon ground cumin shopping list
- 2 garlic cloves, chopped shopping list
- salt and pepper, to taste shopping list
- pinch red pepper flakes shopping list
- 1 tablespoon flour shopping list
- some minced onion or shallot shopping list
How to make it
- Cook lima beans in boiling water for about 5 minutes or steam until sofetned but not mushy.
- Drain and run under cold water to stop the cooking.
- In a food processor, combine all ingredients, except flour.
- Process to a finely chopped consistency.
- Adjust seasoning, if necessary.
- Transfer mixture to a bowl and stir in 1 tablespoon of flour.
- Form patties and saute in an oiled skillet until browned on both sides.
- Place these in pita bread for felafels or wraps and add the fixins you like !
