Beef Stuffed Cabbage Recipe
BEEF STUFFED CABBAGE This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Crowell Estate in Arlington, Texas in 1997.

Ingredients
  • 1 large green cabbage
  • 1-1/2 pounds ground beef
  • 1/2 cup stale bread crumbs plus 1/4 cup
  • 2 bunches Italian parsley finely chopped
  • 1/2 medium red onion finely chopped
  • 10 sage leaves finely chopped
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper
  • 3 eggs
  • 2 cups basic tomato sauce
  • 1/2 cup dry white wine

Directions
  1. Preheat oven to 375.
  2. Remove 20 whole leaves from cabbage and plunge into boiling water.
  3. Cook until soft enough to fold about 5 minutes.
  4. Drain and rinse with cool water and lay out on clean kitchen towel to continue cooling.
  5. Combine beef, 1/2 cup crumbs, 1/4 cup parsley, red onion, sage, salt, pepper and eggs.
  6. Mix well with hands.
  7. Lay out cabbage leaves and place a medium handful of beef in lower center of each leaf.
  8. Fold lateral sides inward and roll from base to form closed pocket out of each leaf.
  9. In large ovenproof casserole place half the tomato sauce and all the white wine.
  10. Lay cabbage rolls on top of sauce until covered with one layer.
  11. Spoon remaining sauce over and bake 1 hour.
  12. Remove and sprinkle with remaining bread crumbs and parsley then serve immediately.
