LOST CLAM PIE I obtained this recipe from an estate sale when I purchased the family collection from the Omega Estate in Waxahachie, Texas in 1994.

Ingredients
  • 1-1/2 cups mashed potatoes
  • 1 cup chopped onions cooked
  • 1 cup minced clams drained with juice reserved
  • 12 hard cooked eggs chopped
  • 9 inch unbaked pie crust

Directions
  1. Layer potatoes, onions, clams, chopped eggs and clam juice in uncooked pie crust.
  2. Repeat layers twice ending with eggs and juice then cover with vented top crust.
  3. Bake at 450 for 10 minutes then reduce heat to 350 and bake for 1 hour.

Wow, I love clams and pies... this is unique. Do the potatoes stay fluffy (given utilizing homemade real potatoes) even with a top crust? Gads, I want to make this right now!
