Ingredients
  • Butter-flavored cooking spray
  • chopped celery 3/4 cup
  • green pepper 1/2 cup chopped
  • onion 3/4 cup chopped
  • minced garlic 2 teaspoons
  • water 1/4 to 3/4 cup as needed
  • lean ham diced 3/4 cup
  • whol tomatoes 1 (28-ounce) can including liquid
  • tomato sauce 1 (8-ounce) can
  • chili powder 1 teaspoon
  • cayenne pepper 1 teaspoon
  • file powder (cajun seasoning) 1 teaspoon
  • hot sauce 1/2 to 1 teaspoon
  • cooked shrimp 1 1/2 pounds med. size
  • cooked rice

Directions
  1. Coat skillet with cooking spray
  2. saute celery, green pepper, onion and garlic till onion becomes transparent. Gradually add water to the pan, as needed to keep veggies from sticking to pan.
  3. add ham and continue to saute for 2 or 3 min.
  4. stir in canned tomatoes, including the juice, and the tomato sauce.
  5. add chili powder, cayenne pepper, cajun seasoning, and hot sauce.
  6. Stir ingredients to blend well and allow to simmer uncovered for about 20 min.
  7. add shrimp and simmer for 10 min more.
  8. serve over hot rice.
