Oatmeal Delight Muffins

- 1 1/2 cups boiling water shopping list
- 1 1/2 cups quick oats shopping list
- 3/4 cup margarine; softened shopping list
- 3/4 cup sugar shopping list
- 1 1/4 cups brown sugar shopping list
- 2 whole eggs shopping list
- 1 teaspoon vanilla shopping list
- 2 cups flour shopping list
- 1 1/2 teaspoons cinnamon shopping list
- 1/4 teaspoon nutmeg shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon salt shopping list
- 1/2 cup walnuts; chopped shopping list
- 1/2 cup raisins shopping list
- 1/2 cup coconut shopping list
How to make it
- Preheat oven to 400ยบ.
- Combine boiling water and oats in a bowl, cover and set aside (no need to actually cook them on the stove).
- Cream margarine and sugars, add eggs and vanilla.
- Add dry ingredients and mix well.
- Stir in nuts, raisins and coconut, then softened oatmeal.
- Scoop into paper lined or sprayed muffin tins.
- Bake for 25-30 minutes or until done.
- NOTES : An ice cream scoop works well to portion out muffin batter. You can mix a larger batch of this muffin batter and store it in the refrigerator for up to 2 weeks and bake off fresh muffins whenever you want them.
