Curried Peanut Rice Recipe
This curried peanut rice is just the right accompaniment to your favorite Chinese stir fry.

Ingredients
  • Curried Peanut Rice
  • 2 TBS. vegetable oil
  • ¼ cup sliced green onions
  • 2 tsp. Curry powder
  • 1 can (10 ¾ oz.) condensed chicken broth
  • ½ cup frozen peas
  • 1 ¼ cups quick cooking rice, uncooked
  • 1 ¼ cup coarsely chopped unsalted peanuts

Directions
  1. In a 2- quart saucepan over medium heat, in hot oil, cook green onions and curry powder until onions are tender. Stirring occasionally.
  2. Add broth and peas. Heat to a boil. Add rice. Remove from heat and cover. Let stand 5 minutes or until most of the liquid is absorbed. Stir in peanuts. Fluff with a fork before serving. Makes 2 1.2 cups
