My Tutti Frutti Fudge Recipe
I don't use a thermometer for this recipe! My failproof fuge I had for over 40 years! Always a sucess and looks beautiful when cut. Prepare on a dry day and follow directions precisely!

Ingredients
  • 18 oz. good quality semi-sweet chocolate chips
  • 8 oz. whole marshmallows, cut up in bite size pieces
  • 2 cups coarse chopped nuts ( walnuts, pecans, macadamias etc. )
  • 1 8 oz. jar marachino cherries chopped and drained well
  • 1 tsp. pure vanilla extract
  • 1/2 cup flaked coconut (optional )
  • 1 can evaporated ( not condensed ) milk
  • 2 sticks butter or margarine
  • 4 1/2 cups white granulated sugar

Directions
  1. Prepare on a dry day: ( It sets up better )
  2. Butter the bottom of a 9 x 13 inch oblong pan.
  3. In a large bowl combine the chocolate chips, cherries , nuts and cut up marshmallows and set aside.
  4. In a large heavy ( good quality ) saucepan melt butter over low heat.
  5. Add and stir in sugar and milk.
  6. Increase heat to medium and stir constantly until mixture comes to a boil.
  7. Once a rolling boil, boil 10 minutes only stirring now and then.
  8. After the 10 minutes pour the mixture over the reserved chocolate, nuts, cherries and marshmallows stirring to melt chocolate but leave marshmallows partially unmelted.
  9. Stir in vanilla.
  10. Pour mixture into the buttered pan.
  11. Sprinkle the coconut on top.
  12. Cool completely at room temperature.
  13. Chill and cut.
  14. Note: this fudge recipe is very versatile.
  15. You may stir coconut into mixture if desired or even omit it.
  16. You may use raisins instead of nuts or substitute
  17. candied pineapple for the cherries etc.
